Yogi Treats – Butternut Squash & Apple Soup

On these cool autumn evenings it nice to come home from work and warm yourself up with a warm hearty bowl of soup. This Butternut Squash and Apple soup is not only thick, creamy, and full of flavour, but the antioxidants will give your immune system the boost it needs as we head in to the dreaded cold and flu season.

Ingredients:

5 cups butternut squash, peeled and cubed (after roasting)
4 cups unsweetened almond milk
1 large organic apple, about 1 cup
½ cup organic carrot, chopped
1/4 cup sweet onion, diced
2 large garlic cloves
2 large pitted dates
2 tbsp. coconut oil
2 tsp. ground cinnamon
1 tsp. sea salt
1/2 tsp. ground black pepper
juice of 1 orange
